If you are thinking about changing your diet, and you want to notice some big changes, I suggest you look closer at the flours that you use in your everyday baked goods. One day, while in the kitchen, I asked myself “what if I started using whole wheat flour in some of my recipes?” In an attempt to make my recipes healthier this year, I have had to start substituting certain ingredients to make them friendlier to the health conscious consumer. As I was thinking about how this would affect my baked goods, I ended doing some research into the real differences between enriched white flour and whole wheat flour. The research was eye opening. Whoopie Pie Bar!!!

First off, I have to announce that The Male Baker is married! Back on November 5th, I said “I do” to my wonderful wife Hannah. Since then, I cannot stop thinking about the ever soo scrumptious whoopie pie bar at our wedding. Throughout the months before November 5th, I spent a lot of my time thinking about what I could bake for the dessert at our reception. A couple months before our wedding, I decided that whoopie pies would make a classy, delicious, and unique dessert. But just a stack of plain whoopie pies, lacked the zest I wanted for an unforgettable dessert. Luckily, one sunny afternoon in Santa Barbara, Greg Spencer, my father-in-law, came up with a brilliant idea! I am sure his idea came to surface while he was on his front porch, grading way too many papers with a hot cup of coffee at his side…a Whoopie Pie Bar for the wedding! Just pure genius right??!!!! 7 Tips For Soft and Chewy Cookies

So first and foremost, I gotta let you in on one of my top 3 pet peeves. Crispy, hard and overbaked cookies!!!

To tell you the truth, this is one of the reasons why I began my baking extravaganza. A lot of the hobbies that I start in my life are primarily because I want to conquer a problem of mine in some way. For example, you may ask why I tried to become more like Arnold Schwarzenegger when I was in high school? Well, like many boys, I was born. And then 17 years later I realized that becoming like Arnold just made sense. I started pumping iron as a hobby with a goal in mind to become the next Mr. Olympia. Of course I chose the one goal that I was never going to attain, mainly because I prefer baked goods to steroids! So there ya have it. But back to my original reason for this post…:)

When I first began baking I had a goal of figuring out how to uncrispify my cookies and make them into delicious mounds of chewy. It took me many burnt cookies and frustrating nights before I slammed on the panic button and realized that I had just jumped into this whole baking thing without any knowledge. Major NO NO. Tips for Valentine’s Day Gifts

Flower this. Chocolate that. Romanticize this and that.

Frankly, I am sick of all the consumerism surrounding Valentine’s Day. I hate the feeling that I have to do something out of the ordinary for my loved one as soon as it strikes February 14th. There is so much pressure from this consumer created holiday that makes everything I do on this day feel a little less special. What is the big problem with making your loved one feel special on a day that has no “to-do-list” on it? Why can’t yesterday or tomorrow be that day when you surprise your loved and take her out when she doesn’t even see it coming!

I see Valentine’s as a day to celebrate the ordinary and to take it as just another day. My trick is to use any of the other 364 days of the year to make my loved one feel special, that way there are no expectations built into my relationship surrounding Valentine’s Day each year.
