After a long summer work day outside, I decided that I needed to treat myself to some chocolate. What better way to do so than by concocting up some brownies that even Oprah gave props to on her website! The thing about these brownies is that you gotta watch them closely when they are about to be done. Like everything you bake, you should be in the kitchen and making sure that nothing gets burnt (remember my post about burning baked goods, #1 on the pet-peeve list!). So grab a book, get all comfy and don’t leave the kitchen until a toothpick comes out of these brownies with a few moist crumbs on it. I guarantee that you will feel much better about taking these over to a friends place to enjoy if they are baked for just the right amount of time. Much like I did a few nights ago to watch the Vancouver Canucks lose to the Boston Bruins in Game 7 of the Stanley Cup Finals! This loss also made the brownies taste much more delicious than usual! This is a treat among all treats. Even when you are down and out from sickness, like I am right now, these Sweet and Salty Brownies hit the spot. They have just the right amount of sea salt on top to counter the amazing sweetness of the brownie inside! It is definitely one of those comfort foods that make you feel better when you are at your worst. There is a caramel layer in the middle that is subtle enough to not overpower the rest of the taste. It was the first time that I made caramel and it was kind of fun. The corn syrup bubbles like none other and the only hard part is taking the caramel off the heat before it burns in a matter of second’s right before your eyes. Luckily, my first effort paid off even though I was pretty sure that I botched it. In which case I probably would have had a temper tantrum and thrown the hot caramel out the door (only because I am sick of course)! These brownies are best enjoyed the day after they are baked, but you can eat them whenever you feel like it.
Here is a little taste from heaven. Not only do these brownies have the perfect mixture of cheesecake and brownie but there is a little hint of espresso in them! I found this recipe in a Canadian Living magazine a long time ago and I had to make them. It isn’t often that I see a recipe from a magazine, photocopy it and then bake it immediately. On a scale of 1 to sporadic baking, these are definitely on it! When I first started to bake I really had to find baked goods that stuck out amidst the avalanche of recipes in magazines, on the internet and from other people’s recommendations. Everyone loved them a lot so I put these cheesecake brownies on my hot list of recipes. These are enjoyed best with some tea or coffee and some ice cream.

Boom! The tastiest Blondie is coming your way and it is unlike anything you have ever tried before. Your experience will be enhanced because these Blondie’s are stuffed with Snickers bar and graham crackers which give them the taste you have always been looking for. Now there is no need to try any other Blondie recipe! I know this may be going over board but I just really want you to try these at home. If you can’t try them at home, at least I gave you another idea for your next birthday present. These are best enjoyed hot out of the oven with some ice cream to cool them off.
