Lemon Poppy Seed Muffins With Light Lemon Frosting

I haven’t blogged in a while! Last week was a long time ago so I know you have all been craving some more baked goods. This next concoction of lemon and poppy seed was on my craving list for quite some time. Every time I thought about this recipe I couldn’t help but to imagine a light and fluffy muffin that carried no guilt along with it. This recipe is no different. The muffin has a strong lemon taste and the poppy seeds give it a little crunch. To top it all off I created a light lemon frosting that adds a bit of sweetness to the whole muffin experience. These muffins are the best in the morning with a cup of joe. Enjoy my friends.

Quick and Delicious Blueberry Streusel Muffins

Here is a little taste from my childhood. Although I always want the best for my followers, I had to think twice about putting one of my moms best muffin recipes on my blog. But after all the pros and cons were thought out in my mind, I could not hide this one from you!

Growing up I vividly remember many mornings and evenings when these delicious blueberry streusel muffins would come out of the oven! My siblings and I would just go wild whenever we knew these muffins were being baked. We could not keep our hands off of them, even when they were piping hot out of the oven.

This afternoon I got my first baking job as The Male Baker! A group of girls were having a breakfast party before they went skiing for the day and they wanted to fill their stomachs with some of my baked goods.

So I set off to find the best banana muffin recipe that I could find from a whole array of sources; friends, friends of friends, neighbours, baking books and of course the internet. I searched and searched but nothing was coming up. I was getting pretty discouraged and I even thought that I was going to have to cancel the breakfast party and my first baking gig would be gone forever. Luckily, not too long after I gave up, my friend Amy offered me her favorite banana muffin recipe in exchange for half a dozen muffins! I took the offer and went to the kitchen like a mad man because time was running out! So come follow me on my journey through the creation of these wonderful muffins and you will find out that it is definitely worth your time!

Winter Apple Pie Muffins!

Tis the season! Seriously, these muffins are great for this time of year. They will warm you right up and you will definitely want seconds. They are a great breakfast snack with butter!

Makes 12 muffins

Ingredients

2 1/4 cups All Purpose Flour
1 1/2 cups Packed Brown Sugar
1 tsp Baking Soda
1/2 tsp Salt
1 Egg
*1 cup Buttermilk
1/2 cup Butter, melted
1 tsp Vanilla
**2 1/4 cups Chopped and Peeled Apples
