Dirty old bananas, 100% pure peanut butter, and chocolate chips are three of my favourite things. This is especially true when I can use all three in the same recipe to concoct a moist, delicious, and tasty peanut butter banana bread with mini chocolate chips on top! So here is a little breakfast treat for you to try. These Buttermilk Waffles with Caramelized Bananas and Maple Syrup will absolutely blow you away. The smell alone from these waffles will make your taste buds dance! There is a little history behind waffles for me and I can’t help but to think of these memories every time I make them, so here it goes. Back in the old days when I was living at home, Saturdays were my sleep in days. The only advocate against my sleeping in was my mom, so she came up with a brilliant way to awake me. Instead of just waking me up and saying that I was sleeping the day away, my mom would make home made waffles around 9 in the morning. As soon as the scent got down into my bedroom I would bolt upstairs and be treated to waffles with all sorts of toppings. From chopped fresh fruit, fruit puree, whip cream and maple syrup. I would eat to my hearts delight and I wouldn’t even think of why I was up so early. Turns out it ain’t a bad way to be woken up by your mom on a Saturday morning!
This afternoon I got my first baking job as The Male Baker! A group of girls were having a breakfast party before they went skiing for the day and they wanted to fill their stomachs with some of my baked goods.
So I set off to find the best banana muffin recipe that I could find from a whole array of sources; friends, friends of friends, neighbours, baking books and of course the internet. I searched and searched but nothing was coming up. I was getting pretty discouraged and I even thought that I was going to have to cancel the breakfast party and my first baking gig would be gone forever. Luckily, not too long after I gave up, my friend Amy offered me her favorite banana muffin recipe in exchange for half a dozen muffins! I took the offer and went to the kitchen like a mad man because time was running out! So come follow me on my journey through the creation of these wonderful muffins and you will find out that it is definitely worth your time!
